Single Category of Posts on a Page

First order of business -- thank you so much for this awesome Theme. While I'm relatively new to WP, this theme goes way beyond anything else.

Now, to my question. I did try a search, but didn't see anything.

I am trying to have a page that will contain "posts" only from a single category. I would like to display these posts differently in some of the cases,
which I will try to explain.

First Usage:
I'm trying to list all the posts in the "news" category to a "news" Page and have them formatted like a "page of posts".

What I've tried ... and the issues encountered

a) News page is set in the Settings|Reading as the default blog page -- this displays all my posts and all my categories -- not what I wanted.
b) Unset the "News Page" in Settings|Reading - set the template of the News Page to "Page of Posts" -- get the right format [date, title, excerpt] - but all categories.
c) Use the Query Posts widget and place it into the Adhoc Widget #1 and use the shortcode to place it one my "News" page -- this gets the correct category=news but doesn't format the posts with the page of posts format [ date, title, excerpt/full ].

Any help, hints, pointers are greatly appreciated.

You don't need any page or something else for this. See this link: http://www.alwaysbelearning.org/category/news/ . There is a page of posts with articles from category "News". It's the standard way of Wordpress to display categories.

All you need to do is to add this link (and links to any other category needed) in menu - go at Dashboard -> Appearance -> Menus - here choose pages/categories/links for menu (don't choose News page, but News category) rearange them by drag-and-drop to respect your desired order, save your menu and assign it as "Navigation Bar Below Header" in the little panel from top left. That's it, enjoy your category page.

That gets me over my first hump. I had that variation at one point, but what I was missing was changing the default "Category Views" into "Full Page" posts.

Now, the question is ... for other Categories, I want them as Tiles or Excerpts ... it seems to be an "all or nothing"?

Sorry for the newbie questions.

Can someone help me with this? I want to do the same thing... I see how to add a single category to the menu, but I would like that category tab to show excepts of the posts or have the posts tiled instead of having the entire post visible.
