In Options -> Layout: Excerpt/List/Tile/Mosaic/Full I have
- All pages
- 30 words
But I want to choose what's in the excerpts.

This is standard Wordpress.
Ensure that Excerpt is turned on in 'Screen Options' in the Post edit page and then put your manual excerpt in there.
